Marthe Henry Boillot, granddaughter of the esteemed Pierre Boillot, established her own domaine in 2013 in Meursault, Burgundy. Drawing from her experience at Domaine Jean-Noël Gagnard and Domaine Rougeot, she produces wines with a strong expression of terroir, marked by freshness and balance. Her approach includes organic farming, minimal intervention, and extended barrel ageing without racking. Sulfur additions are kept to a minimum, used only at bottling.
The vintage was characterized by a warm growing season, leading to ripe fruit with balanced acidity. Grapes were hand harvested and underwent whole-cluster pressing, followed by fermentation in oak barrels. The wine was aged in oak barrels for several months, with minimal sulfur added at bottling. It offers aromas of ripe orchard fruits and subtle oak spice, with a creamy texture and a long finish.
