Domaine Sylvain Cathiard is a Vosne Romanée based estate regarded as one of the benchmark producers of the Côte de Nuits, known for highly detailed, site expressive wines that combine depth with finesse. Now run by Sébastien Cathiard, the domaine continues the legacy established by Sylvain, maintaining a strong focus on meticulous vineyard work, low yields and careful selection across both village and Premier Cru parcels in Vosne Romanée, Nuits Saint Georges and neighbouring appellations. The style is defined by precision in both vineyard and cellar, with controlled extraction and élevage in French oak that prioritises integration, purity of fruit and long term ageing potential.
Bourgogne Aligoté is sourced from carefully selected parcels in Burgundy where Aligoté is planted on limestone rich soils that help preserve its natural acidity and linear profile. The variety is traditionally more rustic than Chardonnay, but in the hands of a quality focused producer like Cathiard it is handled with greater precision and restraint, highlighting freshness and tension rather than overt fruit weight. Vinification is carried out with gentle pressing and cool fermentation to retain aromatic clarity, followed by élevage in stainless steel or neutral vessels to preserve purity and freshness. The wine shows citrus zest, green apple and pear, with white floral notes and a subtle saline, mineral edge. The palate is crisp and focused, with bright acidity and a clean, dry finish that emphasises precision and drinkability over richness.
