Sylvain Pataille is one of the most intellectually rigorous and quietly influential vignerons working in Burgundy today. Based in Marsannay, he established his domaine in 1999 and has since become a leading voice in low intervention viticulture across the Côte de Nuits. Farming is certified organic and increasingly shaped by biodynamic principles, with a strong emphasis on soil health, massal selections and the preservation of Burgundy’s overlooked varieties. His parcel specific Aligoté bottlings have become benchmarks for the grape, revealing the nuance and age worthiness possible from carefully farmed old vines.
Charme Aux Prêtres is sourced from an old vine parcel planted on limestone rich soils that lend precision and chalky tension. The warmth of 2022 brought generous ripeness, balanced by Aligoté’s naturally high acidity. Fruit is hand harvested, whole bunch pressed and fermented with indigenous yeasts, before ageing in older oak barrels to build depth without masking site expression. The profile is driven by citrus peel, orchard fruit and a subtle saline edge, with layered texture and a long, mineral finish.
