Étienne Fort is a dynamic and innovative winemaker based in the Limoux region of Languedoc, situated in the foothills of the Pyrenees. His estate spans approximately 11 hectares at altitudes ranging from 400 to 520 metres, benefiting from a Mediterranean climate with Atlantic influences. The vineyards are planted on clay-limestone soils, with slopes between 20–30°, which contribute to the wines’ freshness and minerality. Before 2011, Étienne sold his family's high-quality grapes from Château St Salvadou to the local cooperative, where they were used in generic sparkling wines. Dissatisfied with this outcome, he began bottling his own wines under the label Monsieur S in 2013, focusing on producing exceptional sparkling wines that reflect the unique terroir of Limoux. The estate practices organic viticulture, with a commitment to minimal intervention in both the vineyard and the winery. Hand harvesting is standard, and winemaking techniques are inspired by traditional Champagne methods, including fermentation with indigenous yeasts and extended lees aging. The wines are characterised by their purity, freshness, and expressive terroir.

Blanquette de Limoux NV is made primarily from Mauzac grapes grown on clay-limestone soils at 400–450 metres altitude. Harvested by hand, the grapes undergo méthode traditionnelle fermentation in bottle using indigenous yeasts, with approximately 12 months on lees. No dosage is added, and sulphur use is minimal. The wine exhibits floral lift, crisp green apple and stone fruit, and a delicate minerality, with refreshing acidity and finesse.
