Domaine Roulot is one of the benchmark estates in Meursault, renowned for its meticulous parcel selection, precise élevage, and a style that prioritises tension, salinity and transparency over overt richness. The domaine works almost exclusively with old vine Chardonnay planted across a mosaic of finely defined lieux dits in and around Meursault, with farming focused on soil health, controlled yields and optimal phenolic maturity. In the cellar, the approach is highly restrained, with native fermentations, careful use of oak and a strong emphasis on preserving site specificity through long, measured élevage.

Auxey Duresses 1er Cru Rouge comes from selected hillside parcels within Auxey Duresses, where limestone and clay rich soils sit on well drained slopes that promote both aromatic lift and structural clarity in Pinot Noir. The vines are carefully managed for low yields, with fruit harvested by hand at balanced ripeness to preserve freshness and phenolic precision. In the cellar, grapes are partially destemmed depending on vintage conditions, then fermented spontaneously in open top vessels with gentle extraction to avoid over extraction of tannin. Elevage takes place in oak barrels, predominantly older oak with a restrained proportion of new wood, allowing the wine to develop fine grained structure, red fruit purity and a subtle mineral spine while maintaining the domaine’s signature restraint and definition.
