Domaine Thillardon is a family estate in the Chénas cru of Beaujolais run by Paul‑Henri Thillardon with his siblings Charles Jean‑Baptiste and Aude. Paul‑Henri established the domaine in 2008 after moving from the south of Beaujolais and has worked with organic farming from the beginning, adding biodynamic practices over time and using horse ploughing on steeper parcels. The team works steep slopes and old vines with a focus on sustainable practices, manual harvesting and minimal intervention in the cellar with indigenous yeasts and gentle vinification. This approach produces wines that show purity of fruit and a clear sense of terroir.
Au Sud du Nord VDF Blanc 2021 is a white wine made from 100 % Chardonnay sourced from organically farmed vineyards in Beaujolais. This cuvée was originally made from purchased grapes as the domaine’s first white bottling before their own white parcels were fully integrated. The grapes are hand harvested and softly pressed before fermentation with indigenous yeasts and extended ageing on lees in old barrels for nearly twenty months. The wine offers bright citrus and orchard fruit aromatics with saline minerality and texture that reflect the clay and limestone influenced soils of the region.
