Farming biodynamically in Arbois, Daniel works with ancient grape varieties native to Jura, practising low intervention winemaking that embraces spontaneous fermentation, native yeasts, and minimal sulphur. His cellar philosophy revolves around purity and longevity, letting the terroir’s nuances express themselves fully through carefully controlled oxidative and reductive aging techniques.
The 2017 Arbois Vin Jaune from Daniel Dugois is a benchmark expression of Jura’s signature wine style, crafted from 100% Savagnin grapes. After wild fermentation, the wine is aged under voile yeast for over six years in old oak barrels, a painstaking process that imparts the hallmark oxidative character while protecting the wine from excessive oxidation. The result is a deep golden amber colour with an intense aromatic profile rich in walnuts, roasted hazelnuts, dried orange peel, and hints of curry and spice, layered with subtle floral and herbal notes.
