Farming biodynamically in Arbois, Daniel works with ancient grape varieties native to Jura, practising low intervention winemaking that embraces spontaneous fermentation, native yeasts, and minimal sulphur. His cellar philosophy revolves around purity and longevity, letting the terroir’s nuances express themselves fully through carefully controlled oxidative and reductive aging techniques.
The 2020 Arbois Savagnin Sous Voile is a stunning example of the traditional Jura method where Savagnin grapes undergo a natural fermentation before being aged under a distinctive veil of flor yeast “voile” in old oak barrels for a minimum of 18 months. This voile layer protects the wine from full oxidation while imparting complex oxidative nuances and delicate nutty aromas. Daniel’s version displays a pale golden colour with remarkable clarity. The nose reveals notes of fresh almonds, lemon zest, green apple, and a hint of bruised walnuts, underscored by subtle floral and herbal undertones. On the palate, it is vibrant yet weighty, with fine acidity balanced by saline minerality and a chalky texture. The extended lees aging under voile develops intricate layers of flavour, producing a wine that is fresh, ethereal, and built for long-term evolution.
