Originally from Grenoble, Sylvain worked as a carpenter for 17 years before transitioning to winemaking in 2014. Noticing that new entrants in the wine industry often landed low-paying jobs at vineyards, he founded a cooperage business specializing in restoring old barrels, providing him with a unique informal entry to the world of winemaking.
In January 2017, Sylvain and Anne Cadic took over Domaine des 13 Lunes, facing crop loss due to spring frost. A grant of 10,000 euros from Alpes Contrôles saved their venture. Their vineyards span Abymes and Apremont, two Crus known for subpar winemaking, but Sylvain aims to change that narrative with his passion for quality.
Situated beneath Mont Granier in the Chartreuse pre-alpine range, Apremont and Abymes feature limestone-rich soils due to a historic landslide. Sylvain embraced biodynamic practices inspired by his training and Steiner's philosophy, striving for terroir-driven yet affordable wines.
In the cellar, Sylvain opts for simplicity: hand-harvesting, gentle pressing, wild yeast fermentation, and minimal sulfur use, resulting in wines that truly reflect their terroir. Sylvain and Anne have rapidly excelled in their winemaking journey, joining the ranks of renowned Savoie producers.
This is a blend of multiple parcels in Apremont averaging 50yo, all of which are on the limestone scree soils that resulted from the Mont Granier’s landslide. Fermentation and élevage on fine lees take place in ovoid fibreglass vessels. The latest vintages were warm lending jacquère more weight and ripeness than usual – this wine offers silky, peachy fruit on the palate. Sylvain managed to extract lovely bitters resulting in a refreshing and saline finish.
