Clos du Gravillas is based in Saint Jean de Minervois, where John and Nicole Bojanovski have farmed organically since 1996. John’s background in ecology has shaped the estate’s philosophy from the outset, with a strong focus on biodiversity, soil health and low yields rather than appellation driven styles. The vineyards sit on a high limestone and gravel plateau exposed to wind and sun, creating naturally low vigour conditions that suit old vines and favour freshness despite the Mediterranean climate. The domaine has long been associated with natural wine in the Languedoc, but always with a strong sense of balance and site expression rather than ideology.
A Fleur de Peau Muscat 2022 is made from Muscat Blanc à Petits Grains grown on limestone soils around Saint Jean de Minervois and vinified as a dry skin contact wine. The altitude and cool nights help retain aromatic precision while extended maceration builds texture and grip. The wine is expressive yet controlled, combining floral intensity with citrus peel, gentle phenolic tension and a saline mineral edge.
