Azienda Agricola COS was founded in 1980 by three friends: Giambattista Cilia, Giusto Occhipinti and Cirino Strange. The acronym of their surnames (Cilia-Occhipinti-Strange) gives rise to the company's name. On a shoestring budget, the three friends vinified the grapes from their parents’ vineyards. Throughout the 80s they sought to resurrect Cerasuolo di Vittoria (Nero d’Avola and Frappato) a previously maligned and underappreciated wine. The journey has taken them away from oak, to cement, and finally into amphora in order to obtain the most aromatic expression of the wines. In 2005 Cerasuolo di Vittoria was upgraded to DOCG status, thanks in part, no doubt, to their pioneering work.
The palate reveals sweet aromas of apricots, dried flowers and orange peel. This wine is very appetizing and highly elegant.

Winemaking Hand harvested grapes in September. Spontaneous fermentation on skins with indigenous yeasts. Ageing in cement tanks for 9 months, then bottled.
