Vin Noé is a natural wine project led by Jonathan Purcell, based in the Mâconnais region of Burgundy. Having worked at Domaine Pacalet, Purcell applies minimal intervention and organic viticulture to his vineyards, embracing whole-cluster fermentations and spontaneous yeast activity. His wines showcase a raw yet refined expression of terroir with textured, lively character and balanced freshness.
The “Shadows” designation reflects both the cooler microclimate and the wine’s more restrained, reductive edge within the Vin Noé range. Fermentation is carried out with indigenous yeasts, followed by élevage on fine lees with a measured use of neutral oak to build texture without obscuring mineral detail. The 2023 vintage combines ripeness with natural freshness, giving the wine a precise structural core. Aromatically it moves from lemon peel, green apple and white peach into white flowers, crushed stone and a subtle smoky reduction. The palate is taut and focused, with high energy acidity, fine phenolic grip and a long, saline finish that emphasises the chalk driven identity of Saint Aubin’s altitude and soils.
