Domaine Tawse is a Beaune based Burgundy estate founded in 2006 by Canadian entrepreneur Moray Tawse, who built the domaine through the acquisition of high quality vineyard holdings across both the Côte de Nuits and Côte de Beaune. The project was conceived with the ambition of operating at the top tier of Burgundy, assembling an extensive range of Premier and Grand Cru parcels in appellations including Gevrey Chambertin, Chambolle Musigny, Nuits Saint Georges, Meursault, Puligny Montrachet and Volnay. From the outset, the philosophy has been centred on precision viticulture, with organic and biodynamic principles applied across the vineyards alongside strict yield control, meticulous sorting and careful harvest timing. Winemaking is overseen by Pascal Marchand, whose approach brings a disciplined, low intervention style shaped by his long experience in Burgundy, favouring whole berry fermentation where appropriate, gentle extraction and extended élevage in French oak to preserve clarity, structure and site definition.
Volnay 1er Cru Fremiets is a well positioned Premier Cru located on the northern side of Volnay, close to the Pommard border, where limestone and clay soils combine to produce a style that balances the perfume and finesse of Volnay with a slightly firmer structural backbone. The site is known for wines that retain aromatic lift and elegance while showing more depth and tension than some of the more delicate central Volnay climats. In Tawse’s hands, the fruit is carefully selected and vinified with controlled extraction to maintain purity and avoid over concentration, allowing the site to speak clearly. Elevage takes place in French oak barrels with a restrained proportion of new oak, supporting integration while preserving freshness and detail. The wine shows red cherry, raspberry and wild strawberry, with violet florals, subtle spice and a fine mineral undertone. The palate is refined and layered, with silky tannins, fresh acidity and a long, elegant finish that reflects both the finesse of Volnay and the precision driven approach of the domaine.
