Bodegas Ponce is a leading voice in the renewed interpretation of the Manchuela region in central Spain, focusing on old bush vines, high altitude sites and a transparent, low intervention approach to winemaking. The estate is driven by the belief that Bobal, the region’s key indigenous variety, can produce wines of finesse and energy when farmed with restraint and precision. Viticulture is organic in practice, with a strong emphasis on old vines, dry farming, and harvesting decisions based on balance rather than alcohol potential. In the cellar, fermentations are spontaneous and extraction is gentle, aiming to preserve the lifted, red fruited character and natural acidity of the fruit.

P F is sourced from selected high altitude parcels in Manchuela planted predominantly to old vine Bobal, with some co planted native varieties depending on site. The vineyards sit on limestone and clay rich soils with significant diurnal range, which helps retain freshness and aromatic detail in a warm continental climate. Fruit is hand harvested and partially destemmed before spontaneous fermentation with indigenous yeasts, with a focus on infusion rather than extraction to preserve delicacy. Elevage takes place in a combination of neutral oak and larger format vessels, allowing the wine to retain purity of fruit while gaining subtle structure. The result is a vibrant, finely textured expression with red cherry and wild strawberry fruit, floral lift, subtle herbal nuance and a chalky, saline finish carried by finely grained tannins.
