The Gerbais family has resided in, and has owned land in, the village Celles-Sur-Ource since 1850. Aurélien is the eighth generation of the family to work the family vineyard, he joined his father, Pascal, at the family business in 2012. Aurélien has been responsible for the domaine’s wine-making since 2009. It was Aurélien’s father who decided, in 1996, that the family estate would be farmed, from that point onwards, using a natural viticulture, respectful of the environment. The estate comprises 15 hectares nowadays, having grown over the decades from the 0.40 hectares with which Ulysse Gerbais (the uncle of Aurélien’s grandfather, Pierre) set the domaine up in the 1950’s.
This Rose is quite dry and very finessed. Tart red fruits with some pretty floral notes. Fresh, vibrant and utterly brilliant with food.

Winemaking Manual harvest, the juice was left to carry out a cold settling at 12°C.
The alcoholic fermentation took place in thermo-regulated stainless steel vat, with selected organic yeasts. Ageing on the fine lees took place for a period of time in these vats then the wine spent 30 months in bottle on the rack producing the bubbles. Malolactic fermentation. No filtration and no fining.
A small amount of sulphur was added to the just-harvested grapes.The disgorging took place six months before the champagne was released for sale. The dosage was: 3-4g/litre (=Extra Brut)
