Domaine Tawse is a Beaune based Burgundy estate founded in 2006 by Canadian entrepreneur Moray Tawse, who built the domaine through the acquisition of high quality vineyard holdings across both the Côte de Nuits and Côte de Beaune. The project was established with the clear ambition of operating at the top tier of Burgundy, assembling an unusually broad range of Premier and Grand Cru sites across appellations including Gevrey Chambertin, Chambolle Musigny, Nuits Saint Georges, Volnay, Meursault and Puligny Montrachet. From the outset, the philosophy has centred on precision viticulture, with organic and biodynamic principles applied throughout the vineyards alongside strict yield control, rigorous sorting and highly selective harvesting. Winemaking is overseen by Pascal Marchand, whose influence brings a disciplined, low intervention approach shaped by his deep experience in Burgundy, favouring whole berry fermentation where appropriate, gentle extraction and long élevage in French oak to preserve clarity, structure and site definition across the range.

Gevrey Chambertin En Pallud is a village level climat situated on the lower to mid slopes of the appellation, where clay limestone soils tend to produce a more open and supple expression of Pinot Noir compared to the firmer, more structured Premier Cru sites higher up the slope. The vineyard typically yields wines with approachable texture and generous fruit expression, while still retaining the darker core and underlying structure associated with Gevrey Chambertin. In Tawse’s hands, the fruit is carefully selected and vinified with controlled extraction to maintain balance and purity, allowing the site character to remain clearly expressed without excess weight. Elevage takes place in French oak barrels with a restrained proportion of new oak, supporting integration while preserving freshness and detail. The wine shows red cherry, raspberry and wild strawberry, with violet florals, gentle spice and a subtle earthy mineral note. The palate is supple and finely balanced, with soft tannins, fresh acidity and a composed finish that reflects both the generosity of the site and the precision driven approach of the domaine.
