Domaine Tawse is a Beaune based Burgundy estate founded and developed by Canadian entrepreneur Moray Tawse, who built the domaine with a clear focus on acquiring exceptional vineyard holdings across both the Côte de Nuits and Côte de Beaune. The estate has assembled an impressive portfolio of Premier and Grand Cru sites, including parcels in Gevrey Chambertin, Chambolle Musigny, Nuits Saint Georges, Meursault and Puligny Montrachet. From its inception, the guiding philosophy has been to work at the highest level of precision in both vineyard and cellar, with organic and biodynamic principles applied across the estate alongside a strong emphasis on low yields, meticulous sorting and harvest timing. Winemaking is overseen by Pascal Marchand, whose influence brings a disciplined, restrained approach shaped by his long experience in both Burgundy and Canada, favouring whole berry fermentation where appropriate, gentle extraction and long, carefully managed élevage in French oak. The result is a style that prioritises clarity, structure and terroir expression across a remarkably broad range of appellations.

Gevrey Chambertin 1er Cru Lavaux Saint Jacques is one of the most highly regarded Premier Crus of the village, located in a side valley above Gevrey where cooler airflow and elevation contribute to a more refined and mineral expression than the lower slope sites. The vineyard typically produces wines with a balance of power and finesse, combining the darker fruit and structure associated with Gevrey with an aromatic lift and precision that places it among the most complete sites in the appellation. In Tawse’s hands, the fruit is carefully selected and vinified with a focus on purity and controlled extraction to preserve both depth and detail. Elevage takes place in French oak barrels with a measured proportion of new oak, allowing structure and integration without masking the site character. The wine shows dark cherry, blackberry and wild raspberry, with violet florals, subtle spice and a faint earthy minerality. The palate is structured and layered, with fine but firm tannins, fresh acidity and a long, composed finish that reflects both the inherent power of Lavaux Saint Jacques and the precise, restrained approach of the domaine.
