Lalù is a young Langhe project founded in 2019 by Lara Rocchetti and Luisa Sala, two winemakers who arrived without inherited vineyards but with a clear point of view. After meeting at the University of Gastronomic Sciences in Pollenzo, they built experience through harvests in both Piemonte and Burgundy, working with producers such as Comtes Lafon, Cécile Tremblay and Trediberri before establishing their own winery between La Morra and Serralunga d’Alba. Their work centres on a small number of vineyard sites, including their own Roncaglie parcel planted in 2015, and reflects a measured, detail focused approach that sidesteps the usual modernist versus traditionalist framing. Instead, the emphasis is on site, balance and control in both vineyard and cellar, with each parcel handled separately and vinified with the aim of preserving its individual character.
The Dolcetto is sourced from hillside vineyards in the Langhe where calcareous clay and marl soils provide drainage and structure while maintaining Dolcetto’s naturally soft tannic profile and dark fruit expression. The variety is traditionally earlier ripening than Nebbiolo and is handled here with a focus on preserving freshness and aromatic clarity rather than concentration. The wine is positioned as a pure, energetic expression of the grape, with vinification designed to highlight fruit purity and drinkability. Fermentation is carried out in concrete with gentle extraction to avoid overworking the skins, followed by a short period of élevage in neutral vessels to retain brightness and immediacy. The wine shows dark cherry, blackberry and plum, with violet floral lift, black pepper and a subtle almond note. The palate is supple and juicy, with low tannin, fresh acidity and a clean, lightly savoury finish that emphasises precision over weight.
