Zeroine
Zeroine is a natural wine project based in the Jura, founded by winemaker Jean-Marc Francois who is dedicated to organic and biodynamic viticulture. Working with old vines in the Côtes du Jura, Jean-Marc focuses on minimal intervention, spontaneous fermentations with native yeasts, and aging in neutral vessels to highlight the pure expression of terroir. The wines are bottled with very low sulphur, unfined and unfiltered.
The 2021 Côtes du Jura Chardonnay is a precise expression of the region’s limestone and clay terroir. The vintage was marked by cooler, more challenging conditions, preserving vibrant natural acidity and yielding wines with refined aromatic complexity. Grapes were hand harvested and whole cluster pressed to maintain delicacy and freshness. Fermentation with native yeasts in stainless steel tanks was slow and steady, preserving primary fruit aromatics. Extended lees ageing enhanced mouthfeel, adding subtle texture without oak influence. The wine displays focused aromas of citrus peel, green apple, and white floral notes, layered with stony minerality and saline nuances. On the palate it is taut and mineral driven, with crisp acidity framing a lingering finish of wet stone and delicate orchard fruit, balancing elegance with energy.
