Evening Land Vineyards is a site driven estate in the Eola Amity Hills AVA, centred around the historic Seven Springs Vineyard. The project was shaped by a Burgundian philosophy from its inception, and today the winemaking is led by Rajat Parr, whose background as a sommelier and global authority on terroir has strongly influenced the estate’s direction. The focus is on organic farming, massal selection and precise harvest timing, allowing the volcanic basalt and marine sedimentary soils of the hills, cooled by the Van Duzer Corridor winds, to define the wines. The aim is clarity and structure rather than power, with restrained oak and minimal manipulation in the cellar.
The 2023 cuvée is drawn primarily from multiple parcels within Seven Springs Vineyard, combining blocks on basalt and sedimentary soils to balance structure and breadth. A mix of Dijon clones and heritage selections contributes to both definition and frame. Native fermentations take place in French oak with a restrained proportion of new barrels, and malolactic conversion is partial to retain freshness. Extended lees ageing builds mid palate structure and textural weight without masking site expression, resulting in a Chardonnay defined more by geology and elevation than by oak.
