Winemaking Manual harvested, destemmed, macerated on skins for 8-10 days, fermented in stainless steel for 8-10 days. Aged in stainless steel vats for 6 months and then wooden barrels for a further 5 months. Undergoes malolactic fermentation. Neither fined nor filtered, small amount of sulphur added at bottling.
