Domaine Thomas Morey is a family owned estate based in Chassagne Montrachet, representing the modern evolution of one of Burgundy’s most respected winegrowing families. Thomas Morey established his domaine in 2007 after working alongside his father at Domaine Bernard Morey, choosing to focus on meticulous parcel selection and precise vineyard farming across Chassagne Montrachet, Saint Aubin and surrounding appellations. The estate is known for its rigorous attention to detail in the vineyard, with sustainable viticulture and careful soil management aimed at preserving balance and site transparency. In the cellar, Thomas Morey employs a restrained approach, using indigenous fermentations, measured oak influence and long élevage to emphasise purity, texture and the structural identity of each climat.
Chassagne Montrachet 1er Cru Baudines is a Chardonnay sourced from a high altitude Premier Cru vineyard on the upper slopes of Chassagne, where cooler conditions and limestone rich soils produce wines of notable tension, precision and aromatic lift. The site is known for its more linear and mineral expression within the appellation, with vines carefully farmed at low yields to preserve concentration and natural acidity. Fermentation takes place with indigenous yeasts in French oak barrels, followed by élevage on fine lees to build depth, texture and integration. A measured proportion of new oak is used to support structure while maintaining clarity of fruit and site definition. The wine shows a focused profile of citrus oil, green apple and white peach alongside floral notes, hazelnut and crushed limestone. The palate is taut and energetic, with fine phenolic grip, bright acidity and a long, saline finish that reflects the elevated, mineral driven character of Baudines.
