New Zealander Dane Johns started his career in wine working for Bill Downie in Victoria, later moving on to start his own label with fruit sourced from just a few organic growers throughout the region. All of Dane’s wines are as hand-made as can be. Small ferments, wild yeast, no new oak, no mechanical pumps, no fining, no filtration and no additions.
A “full’ and reasonably complex drink (by Piquette standards) that does not lack
any interest. It is medium bodied and has amazing aromatics! This is a super refreshing and interesting drink, perfect as an aperitif or for a bottle to share in the afternoon sun.

Winemaking Manual harvested, A proportion of whole bunches are added to Momento Mori’s leftover grape pomace, which in 2022 included Schioppettino, Fiano, Pinot Gris, Vermentino & Syrah. Water is added back to this grape pomace post -pressing (at Mometo Mori, most fruit is pressed very lightly in the first instance so the pomace still contains plenty of life!) for re-fermentation. Unfiltred and unfined and no added SO2.
