Jacques Lassaigne established his eponymous Champagne house in 1972 in Chigny-les-Roses, Marne. Lassaigne farms 10 hectares across Premier and Grand Cru villages including Chigny-les-Roses, Cramant, and Avize. He is known for meticulous vineyard management with a focus on old vines, organic practices, and hand harvesting. All fermentations are with indigenous yeasts, using long élevage on lees in stainless steel, neutral oak, and a combination of cuves. Lassaigne avoids fining and filtration where possible, allowing pure terroir expression to emerge. The house is highly regarded for Champagnes that combine precision, minerality, and aromatic complexity with freshness and balance.
Champagne Les Vignes de Montgueux NV comes from historic Chardonnay vineyards in Montgueux, Aube, known for producing expressive, mineral-driven wines. Grapes were hand-harvested, fermented with indigenous yeasts in stainless steel, and aged on fine lees to enhance texture and aromatic purity. Non-dosé, with a focus on finesse and minerality.
