Sciara is a winery founded in 2015 by Stef Yim, Hong Kong born, Los Angeles raised, who first trained as a sommelier before pursuing winemaking in California and France. Drawn to volcanic soils, Yim chose Etna for its steep slopes, ancient vines, and the potential for extreme altitude viticulture. His vineyards span many contrade on Mt Etna, from ~600 metres up above 1,500 metres; he works with Pre-Phylloxera and old vines, farming organically, using indigenous yeasts, minimal sulphur, natural fermentations, and when possible neutral vessels or amphorae, to let altitude, soil, and vine age articulate the terroir rather than cellar manipulation.
760 AA Sciara 2020 is a red wine made from primarily Nerello Mascalese (~90%) with a portion of Nerello Cappuccio. The fruit comes from vineyards around 730-770 metres altitude (Contrada Taccione and Sciaranuova), on volcanic soils of ash, rock and sand. Grapes were hand-harvested and whole bunch fermented with indigenous yeasts, followed by ageing (meant to include amphora or neutral vessels) to preserve site clarity. There is fine tannic structure, red fruit and mineral lift, wild-herb detail and spice. It combines power with elegance, reflecting Etna’s altitude and soil texture.
