Les Cailloux du Paradis is a landmark estate in the Sologne viticole, based near Soings en Sologne in the Loir et Cher. Founded in the late 1970s by Claude Courtois, the domaine helped define the philosophy and practices that would later form the core of the natural wine movement in France. Today the estate is led by his son, Étienne Courtois, who farms approximately ten hectares of mixed sand, clay, flint, and silex soils bordered by deep woodland. Biodiversity, organic farming, and biodynamic influences underpin all vineyard work, with everything done by hand and without chemical inputs. In the cellar, fermentations are spontaneous with indigenous yeasts, ageing is slow and oxidative in old barrels, and sulphur is never used, creating singular wines that reflect both the terroir and Courtois family philosophy.
Racines Blanc 2020 is drawn from old vines of Sauvignon Blanc and Menu Pineau planted on flint and sandy clay soils within the estate’s oldest parcels. The 2020 season was warm and even, producing concentrated fruit with excellent physiological ripeness. Grapes were harvested by hand and pressed slowly before spontaneous fermentation in old barrels, where the wine remained on its lees for around twelve months without racking. Ageing follows the domaine’s gentle oxidative approach, enhancing texture and depth while preserving the mineral line of the silex soils. The wine shows layers of ripe citrus, orchard fruit, dried herbs, smoke, and saline minerality, with a broad palate, firm structure, and the distinctive earthy complexity characteristic of the estate.
