The Schmitt winery has been in the family for over 230 years with Bianka and Daniel working their 16 hectares for the last decade. Bianka comes from Hungary and they met in 2012 when she was cellar hand in his parent’s winery. They work in full biodynamics which they learned from Alsace vigneron Patrick Meyer and are one of only 80 producers in Germany to be Demeter certified.
Dark salmon pink, almost light red in colour, a touch turbid, aromas of dried red fruits (plums, damsons) and herbs, lovely mouthfeel, plenty of texture, notes of grapefruit, plum, white pepper and hints of tannin.

Winemaking Manual harvest, each grape picked at a different stage following the order P Noir, Merlot and then Blaufrankish. Grapes destemmed. Free run juice in 2,400 litre barrels fermented only indigenous yeasts used. Undergoes malolactic conversion. No filtration, no fining, No SO2 added.
