Winemaking Manual harvested, whole bunch. Macerated for 14 days without pumping over or punching dow. Fermented in stainless steel with indigenous yeast. Aged in stainless steel tanks and a type of amphora (jarre en grès) for 10 months. Undergoes full malolactic conversion. Unfiltered, unfined, No So2 added.
