Marthe Henry Boillot, granddaughter of the esteemed Pierre Boillot, established her own domaine in 2013 in Meursault, Burgundy. Drawing from her experience at Domaine Jean-Noël Gagnard and Domaine Rougeot, she produces wines with a strong expression of terroir, marked by freshness and balance. Her approach includes organic farming, minimal intervention, and extended barrel ageing without racking. Sulfur additions are kept to a minimum, used only at bottling.
The 2021 Coteaux Bourguignons is a red wine crafted from Pinot Noir grapes. The vintage was characterized by a warm growing season, leading to ripe fruit with balanced acidity. Grapes were hand harvested and underwent whole-cluster fermentation, followed by ageing in oak barrels for up to 18 months. The wine was bottled without fining or filtration, with minimal sulfur added. It offers aromas of red berries and subtle earthy notes, with a fresh and balanced palate.
