Paul Lewakowski is one of the most exciting new names to emerge from the Jura. Originally from Michigan, he gained experience at Domaine des Comtes Lafon and Zind-Humbrecht before moving to the Jura in 2015, where he spent four years working alongside the Labet family. He established his own domaine in 2019.Today Paul farms just 3.5 hectares across small parcels in Orbagna, Gizia and Grusse in the southern Jura, working biodynamically with a focus on Chardonnay and Savagnin.
In the cellar, the approach is patient and minimal: spontaneous fermentations, gentle pressing and unusually long élevage, with wines often spending two to three years or more in barrel before bottling. In fact, Paul waited several years before releasing anything at all. Production is tiny, with wines combining depth and texture with the tension, salinity and mineral character of the southern Jura. After years quietly ageing in his cellar, Paul’s wines are only now beginning to reach the market.
Chardonnay from fifty year old vines planted over marnes bleus in a particularly cool site in the shadows of the cliffs of Grusse. The grapes were pressed to barrels for three years of élevage, rendering a nuanced and elegant expression of place, which carries the subtlety and detail we’ve come to expect from the great wines of this village. A wine of impeccable balance and poise, it reveals itself slowly over time.
