In 2020, Paul Gosset launched his first champagnes in collaboration with his father, Michel, who had taken over the family domain in Aÿ in the 1980s. Michel began reducing the use of chemicals in their vineyards at the turn of the century, a philosophy Paul continues and expands by focusing on biodiversity and reducing emissions. The estate spans 3.5 hectares across Aÿ, Mareuil-sur-Aÿ, Dizy, and Chouilly, with Pinot Noir as the dominant grape. In the cellar, Paul uses indigenous yeasts, minimal sulfites, and low dosage, with part of the winemaking done in oak.
