Ovum Wines, founded in 2011 by Ksenija and John House, is dedicated to crafting Oregon wines that authentically reflect the unique character of their vineyards. With a focus on low intervention winemaking, Ovum prioritizes the natural qualities of the fruit, ensuring that the vintage and terroir take center stage. Using native ferments and minimal additives, their wines are aged on lees in neutral barrels, cement eggs, and Austrian casks for added texture and complexity. Ovum's approach is rooted in producing transparent, place-driven wines that celebrate the diversity of Oregon's wine-growing regions.
A blend of ramato-style Pinot Gris to make a wine that was both refreshing and serious. The Pinot Gris came from a vineyard in Columbia Valley AVA and was macerated on skins. The Big Salt component is a blend from 10 vineyards accross Oregon that illustrates different soils and climates.
"Big salt “orange rose” is nearly an equal blend of ramato- style pinot gris (when pinot grigio grapes are crushed and the skins are allowed to spend time with the juice) and big salt, fermented and aged in neutral barrel. The combination of these production methods left us with a wine that doesn’t look or smell like a rose – it isn’t as funky or extracted as an orange wine – it lives somewhere in between…or beyond?"
