Château Saint-Cyrgues sits on the southern edge of the Costières de Nîmes, where the Mediterranean sun meets cooling breezes from the Camargue. The estate has been farmed organically since 2015, with a focus on biodiversity and soil life. Winemaker Vincent Bonnal works with native yeasts and minimal sulphur to preserve purity. For him, transparency is key, each wine should reflect the heat, wind, and stones of Saint-Cyrgues without interference from chemical shortcuts.
The Salamandre Orange is a skin-macerated white made from Grenache Blanc, grown on limestone and clay soils in the Costières de Nîmes. Fermented with native yeasts and macerated for around 15 days, it’s aged in a mix of stainless steel and neutral oak before bottling without fining or filtration. Aromatically lifted with dried apricot, citrus peel, and garrigue, it’s textured and phenolic with bright acidity and a gently tannic, saline finish. No added sulfur.
