Sciara is a winery founded in 2015 by Stef Yim, Hong Kong born, Los Angeles raised, who first trained as a sommelier before pursuing winemaking in California and France. Drawn to volcanic soils, Yim chose Etna for its steep slopes, ancient vines, and the potential for extreme altitude viticulture. His vineyards span many contrade on Mt Etna, from ~600 metres up above 1,500 metres; he works with Pre-Phylloxera and old vines, farming organically, using indigenous yeasts, minimal sulphur, natural fermentations, and when possible neutral vessels or amphorae, to let altitude, soil, and vine age articulate the terroir rather than cellar manipulation. 
Ubriaco Sulla Luna 2021 is a skin-contact white blend (Carricante, Catarratto, Minella Bianca) from multiple parcels on Mt Etna. The vineyards are between ~720-1000 metres altitude, on volcanic soils of rock, ash, sand and volcanic earth. Grapes are hand harvested, fermented with indigenous yeasts, long maceration on skins (approx. 40 days), followed by ageing (stainless steel, amphora or neutral vessels / barrel depending on lot) to preserve texture. The wine shows citrus peel, grapefruit, herbal nuance, saline lift, waxy detail and crystalline fruits, with taut acidity and a lingering textured finish without heaviness.

Winemaking Manual harvested,  whole bunch grapes fermented on skins for 30days  with indigenous yeast. Aged in amphora for about 1 year, then a further 6 months in bottle. Unfiltred, unfined, no SO2 added at any stage.
