Jessica Litaud crafts wines from biodynamically farmed, steep limestone slopes in Vergisson, Mâconnais, including rare parcels in the newly classified Pouilly-Fuissé Premier Crus. Trained with Jean-Marie Guffens and Jean-François Ganevat, she returned in 2019 to restore her family’s 5.5 ha domain using organic and minimal-intervention methods. Her cellar is focused on gentle élevage in older barrels, native yeasts, and very low sulphur. The result is crystalline, mineral-charged Chardonnay that balances precision with vibrancy.
The 2022 vintage of 'Le Trio' is a blend from three distinct vineyard sites, each contributing unique characteristics to the wine. The growing season was favourable, with consistent temperatures leading to even ripening. Grapes were hand-harvested and underwent whole-cluster pressing. Fermentation occurred with native yeasts in older barrels, followed by ageing on fine lees to enhance texture and complexity. The wine was bottled unfined, unfiltered, and with minimal sulphur. It offers aromas of citrus zest, white peach, and a touch of minerality, with a balanced and harmonious palate.
