Romain Hénin is a exceptional Champagne winemaker known for producing wines without added sulphites. He began his career in the cellar as vat room manager at Champagne Henri Giraud, gaining hands-on experience in traditional and precise Champagne production. In 2013, he returned to the family estate, Champagne Pascal Hénin, to assist his parents, but by 2015 he chose to follow his own philosophy of cleaner, holistic viticulture, leaving the family domain to start an independent project. In 2016, he secured 1.2 hectares of AOC Champagne vineyards on lease from several owners, and in 2017 he formally established his own domain. Hénin manages all vineyard work by hand, farming organically and biodynamically, prioritising soil health, biodiversity, and precise expression of each parcel. In the cellar, all fermentations are spontaneous with indigenous yeasts, ageing is carried out in stainless steel or neutral vessels, and sulphur is used minimally, allowing the terroir of Aÿ’s Grand Cru chalk soils to shine.
Blanc Comme Neige Bur Label Grand Cru 2018 is a 100% Chardonnay cuvée from Aÿ. The 2018 vintage offered warm days balanced by cool nights, preserving freshness and aromatic clarity. Grapes were hand harvested and fermented spontaneously in stainless steel, then aged on fine lees with minimal sulphur. The wine is crystalline and precise, with delicate white fruit, citrus peel, and subtle floral notes, supported by vibrant minerality and a long, linear finish.
