Sisters Nathalie and Isabelle Oudin craft some of Chablis’ most refined and expressive wines. Based in Chichée, just south of Chablis, their vineyards on the right bank of the Serein benefit from a southwest exposure and Kimmeridgian limestone soils. Committed to quality over quantity, they have avoided herbicides since 1985 and maintain low yields through careful pruning and massal selection, preserving the genetic diversity of their old vines—some dating back to the 1940s.
In the cellar, their approach focuses on purity and terroir expression. Fermentation and ageing take place in stainless steel with wild yeasts, extended lees contact, and minimal sulphur use to enhance texture. The result is Chablis at its finest—chiselled, mineral-driven, and beautifully balanced.
This is the main cuvée of the domaine from 7ha of vineyards spread over six well located parcels with an average vine age of 30yo. The wine has very precise citrus fruit, good texture and a saline quality suggestive of the limestone bedrock, it feels very composed and at ease.
