Vin Noé is a natural wine project led by Jonathan Purcell, based in the Mâconnais region of Burgundy. Having worked at Domaine Pacalet, Purcell applies minimal intervention and organic viticulture to his vineyards, embracing whole-cluster fermentations and spontaneous yeast activity. His wines showcase a raw yet refined expression of terroir with textured, lively character and balanced freshness.
The 2022 Bourgogne Blanc Pattaya is made from 100% Chardonnay grown on limestone-rich soils typical of the Mâconnais. The dry and warm 2022 vintage led to early harvest to preserve natural acidity. Grapes were hand harvested and predominantly direct pressed, with a portion undergoing full carbonic maceration to add aromatic complexity and texture. Fermentation took place in 500 litre barrels with native yeasts, without added sulphur, fining or filtration. The wine reveals notes of spiced peach, hazelnut, and citrus zest framed by vibrant minerality and a precise, textured palate with a long clean finish.
