Château Haut-Bergey is one of the most forward thinking estates in Pessac-Léognan, with a history dating back to the 15th century and a modern identity shaped by the Garcin-Lévêque family’s commitment to organic and biodynamic farming. The estate has embraced a more ecological approach to viticulture, focusing on biodiversity, soil health and expressing the individuality of each parcel. Located in Léognan on the southern edge of Bordeaux, the domaine works across the classic gravel and clay soils of the appellation, combining traditional Bordeaux heritage with a more natural, precise and low intervention philosophy in the cellar.
Cuvée Paul Rouge is a pure expression of 100% Merlot, created in honour of Paul Garcin-Lévêque and showcasing a softer, more transparent side of Pessac-Léognan. Sourced from biodynamically farmed vines planted on clay and gravel soils, the wine focuses on texture, purity and the natural expression of the variety rather than extraction or power. Hand harvested grapes undergo spontaneous fermentation with indigenous yeasts before ageing in a combination of amphora and oak, allowing the wine to gain complexity while preserving freshness and energy. Aromas of ripe plum, black cherry and blackberry are layered with violet, cocoa, graphite and subtle earthy notes. The palate is refined and silky, with polished tannins, mineral freshness and a long, elegant finish that highlights the finesse of Merlot from this exceptional Bordeaux terroir.
