Les Bottes Rouges is the personal project of Jean Baptiste Ménigoz and Florien Kleine Snuverink, based in Abergement‑le‑Petit near Arbois in the Jura. Jean Baptiste retrained after interning with Stéphane Tissot in 2012 and today they farm about ten hectares of Savagnin, Chardonnay, Trousseau, Poulsard and Pinot Noir on marl, clay and limestone soils using organic and biodynamic principles. In the cellar they prioritise wild yeasts, gentle extraction, minimal sulphur and bottle without fining or filtration to preserve the purest expression of Jura terroir.
La Pépée is a pure Pinot Noir from clay‑silt soils just outside Arbois. The 2022 season delivered warm days balanced by cool nights that helped retain aromatic purity. The fruit was destemmed, fermented naturally and aged for nine months in neutral barrels before bottling with minimal sulphur and no filtration. Elegant and lifted, it shows red cherry, raspberry and spice with silky tannins and herbal nuance.
