Domaine Macle, run by Laurent Macle, is one of the Jura’s great estates, especially revered for its work with sous voile ageing. From vineyards surrounding Château-Chalon, the domaine farms organically and harvests by hand, then ages its wines slowly and naturally in ancient barrels in their deep hillside cellar. The Macles’ style is precise, structured and intensely mineral, with oxidative wines that age for decades and show the deep potential of Jura’s marl terroirs.
The Chardonnay Sous Voile is aged for three years without topping up in old oak, developing a natural film of yeast (voile) and complex oxidative aromas. The 2018 season was sunny and consistent, leading to fruit with great phenolic ripeness and acidity. The resulting wine is intense and layered, with aromas of toasted walnut, preserved lemon, baking spice and dried herbs. Concentrated and dry, with shimmering acidity and long saline persistence, it is a profound Jura white for ageing or decanting.
