I Vigneri di Salvo Foti is the historic Etna based project led by Salvo Foti, one of Sicily’s most influential viticultural figures and a key pioneer in the revival of traditional Etnean viticulture. Working with a collective of small growers and ancient ungrafted vines trained in the alberello system, the project is rooted in meticulous hand farming on steep volcanic terraces. The focus is on preserving historic vineyard practices, maintaining genetic diversity through massal selection, and continuing pre industrial methods of vineyard cultivation. In the cellar, intervention is minimal, with indigenous fermentations and gentle handling designed to preserve the volcanic identity, altitude and energy of Etna’s high elevation vineyards.

Vigna di Milo Carricante is a Carricante based white wine sourced from the Milo area on the eastern slopes of Mount Etna, one of the coolest and most rain exposed zones of the appellation. Here, volcanic soils rich in ash, sand and basalt combine with higher humidity and altitude to produce wines of marked freshness, aromatic precision and linear structure. The vines are traditionally trained in the alberello system and cultivated entirely by hand on steep volcanic terraces. Fermentation takes place spontaneously with indigenous yeasts, followed by ageing in neutral vessels to preserve purity and tension rather than oak derived texture. The wine is defined by its vertical energy and saline backbone, with aromas of lemon zest, green apple, white flowers and crushed volcanic stone. The palate is taut and focused, driven by bright acidity, fine phenolic grip and a long, mineral finish that reflects both the altitude and the cooler microclimate of Milo.
