Very close friends Alwin & Stefanie Jurtschitsch and Martin & Anna Arndorfer founded the new winery, Fuchs und Hase, producing exclusively Pet Nat. They started by selecting a site at altitude, to ensure a cool climate, promoting naturally high acidity and low alcohol. The whole idea of starting to produce Pet Nat was to make sparkling wine without adding anything, not even sulphur, and to still gain a wine which is refreshing to drink, shows its origin and vibrancy. Fuchs und Hase means ‘Fox and Hare’, this is a nod to an Austrian saying ‘where fox and hare say good night’ and refers to an area surrounded by forest.
Each cuvee is a different volume, this is a scale, the higher the number the more skin contact the wine has undergone.
Light brown-orange colour. On the nose it is restrained with aromas of ripe apples, stone fruit and dried fruit; extra dry on the palate, slightly astringent.

Winemaking Manual harvested, Gruner added to extract more flavour/texture, co-fermented on the skins for 2 weeks in stainless steel with indigenous yeast. Bottled when at ideal residual sugar level. When the fermentation is finished, the cold outside temperatures in winter are used to make tartaric stabilisation. After turning bottles upside down for a couple of days, bottles are manually disgorged and topped up with the same Pet Nat. Unfiltred and unfined.

All orders are shipped via UPS Express Delivery. The estimated delivery time is between 3 to 8 working days from the moment of processing.
We offer shipping to all the countries mentioned above for a flat fee of £18.99 per order, regardless of size or weight. Unfortunately, we cannot offer free shipping to these countries.
Due to internal regulations, we are unable to ship our wines to Sweden or Finland.
As an international customer, we will not charge you UK VAT or taxes. However, based on your country's regulations, you will need to pay customs and handling fees, which are generally around 20%.
USA, Canada, Asia, Australia
Although we ship regularly to these countries, we are unable to provide a fixed cost for shipping due to constant rate changes. Please contact us for a bespoke quote.

Packaging
We use only sustainable, recycled and recycling packaging that provides the highest standard of protection to the bottles. When possible, your wine is delivered in reused but reliable packaging that significantly helps the environment and also keeps down unnecessary costs, allowing the wines to do the talking.
