Girard-Bonnet is the culmination of two winegrowing legacies from Mesnil-sur-Oger and Oger. The Girard family were cooperative growers, while the Bonnet estate, once producing 140,000 bottles annually, ceased operations in 1988. Their paths united with the marriage of Philippe Girard and Dominique Bonnet, whose son Paul merged their vineyards to create the Girard-Bonnet champagne brand. Spanning 12 hectares in the Côte des Blancs, the Grand Cru and Premier Cru vineyards are now Organic and Biodynamic certified. Their vinification process prioritizes healthy grapes, with parcels from specific lieux-dits pressed separately to preserve unique terroir characteristics. Juice undergoes natural settling and fermentation in diverse containers, including wooden vats, stainless steel tanks, and amphoras. Aged on lees for at least 10 months, the wines are unfiltered and undergo a second fermentation tailored to each cuvée, resulting in refined, terroir-driven champagnes.
The A Mi-Chemin cuvée reflects the Girard-Bonnet estate, with 50% Le Mesnil sur Oger representing the Girard family and 50% Oger as an expression of the Bonnet family. In addition, this cuvée has their vision of Côte des Blancs champagne, with great minerality and a sharp but not aggressive acidity, sublimated by the aromas of white flowers.
