The Lamy family has been growing vines in Saint Aubin since around 1640, although the domaine as we know it was established by Hubert Lamy in 1973. His son Olivier joined the business in the 1990s and has since become one of the leading figures in the appellation. Known for his meticulous vineyard work and thoughtful approach to élevage, Olivier favours high density planting, gentle extraction and larger, well seasoned barrels over obvious oak influence. The result is a collection of precise, terroir driven Chardonnays that have helped put Saint Aubin firmly on the Burgundy map.
Les Châtaigners comes from a 1.1 hectare parcel on the upper slopes of the Côte de Beaune, where the hillside curves towards Meursault. Around 30 year old Chardonnay vines grow in shallow clay and limestone soils, producing fruit with plenty of concentration and mineral definition. The wine is gently pressed, fermented slowly in older oak demi muids and aged for a further six months in tank. Ripe orchard fruit, lemon zest and white flowers are layered with hazelnut and subtle spice. There is generosity to the texture, but the finish remains focused, chalky and fresh.
