Domaine Hauvette is one of the leading biodynamic estates of southern France, farmed with precision and humility by Éloïse Hauvette. She works 17 hectares of vines in the arid limestone foothills of the Alpilles, a Provençal landscape marked by high elevation, poor soils, and the persistent mistral wind. This natural environment lends itself to low intervention viticulture, and Hauvette has been certified biodynamic since 2003. Everything is done by hand, and her cellar is low tech but meticulous, with fermentation often taking place in concrete or stone vessels and élevage designed to emphasise structure, longevity, and clarity of expression.
Dolia is her masterfully crafted white, a blend of Marsanne, Roussanne, Clairette, and Grenache Blanc, and one of Provence’s most serious ageworthy wines. The 2017 vintage was warm and dry, yielding ripe yet concentrated fruit. Grapes were pressed whole-bunch and fermented spontaneously in concrete eggs, where the wine remained on fine lees for a full year without bâtonnage. No sulphur was used during vinification; only a minimal dose at bottling. The resulting wine is layered and compelling: preserved citrus, herbal tones, crushed almonds, and orchard fruit, wrapped in chalky structure and a salty, stony finish. Deep, quietly powerful, and built for the long haul.
