Domaine Hauvette is one of the leading biodynamic estates of southern France, farmed with precision and humility by Dominique Hauvette. She works 17 hectares of vines in the arid limestone foothills of the Alpilles, a Provençal landscape marked by high elevation, poor soils, and the persistent mistral wind. This natural environment lends itself to low intervention viticulture, and Hauvette has been certified biodynamic since 2003. Everything is done by hand, and her cellar is low tech but meticulous, with fermentation often taking place in concrete or stone vessels and élevage designed to emphasise structure, longevity, and clarity of expression.
A beautifully pure expression of 100% Clairette from Dominique Hauvette’s biodynamically farmed vineyards at the foot of the Alpilles. The old vines grow on shallow, stony clay-limestone and white marl soils, exposed to the cooling influence of the Mistral. Whole bunches are gently pressed before spontaneous fermentation and slow ageing on the lees in concrete eggs, preserving freshness while building subtle texture.
Citrus and green apple meet white flowers, fresh herbs and a delicate iodine note. The palate is light yet beautifully defined, with vibrant acidity, fine bitters and a striking saline minerality. Precise, energetic and wonderfully refreshing, with a long, citrus-driven finish.
