Jessica Litaud crafts wines from biodynamically farmed, steep limestone slopes in Vergisson, Maçonnais, including rare parcels in the newly classified Pouilly-Fuissé Premier Crus. Trained with Jean-Marie Guffens and Jean-François Ganevat, she returned in 2019 to restore her family’s 5.5 ha domain using organic and minimal-intervention methods. Her cellar is focused on gentle élevage in older barrels, native yeasts, and very low sulphur. The result is crystalline, mineral-charged Chardonnay that balances precision with vibrancy.
This 2022 “Sur la Roche” hails from east-facing, high-altitude Premier Cru sites that saw a warm, dry year balanced by cool night-time temperatures, boosting aromatic clarity and ripeness. Grapes were hand-harvested and cuvaison commenced after gentle pneumatic pressing. Spontaneous fermentation in old 228-litre barrels was followed by extended lees ageing and partial batonnage to develop texture while maintaining focus. Bottled unfined, unfiltered and with low sulphur, the wine shows white flowers, wet stone, yellow orchard fruit, fine acid tension, and a long, saline finish.
