Domaine des Vignes du Maynes is based in Cruzille in the northern Mâconnais and has been farmed by the Guillot family since the early twentieth century. Julien Guillot took full responsibility for the estate in 1998 and immediately committed the vineyards to organic and biodynamic farming, making it one of the earliest adopters in Burgundy. The domaine works a mosaic of old vine parcels on limestone and clay soils at elevations between 300 and 400 metres, with many vines planted between the nineteen twenties and nineteen fifties. All work in the vines is manual, yields are extremely low, and harvesting is carried out parcel by parcel with strict selection. In the cellar Guillot follows a resolutely low intervention philosophy built on whole cluster fermentations, indigenous yeasts, no additions and long élevage in neutral vessels, aiming to transmit site, vine age and vintage character with absolute clarity.

Mâcon Cruzille Aragonite 2022 is drawn from a high altitude parcel of Chardonnay planted on pure limestone soils rich in aragonite, a crystalline form of calcium carbonate that gives the wine its marked tension and precision. The 2022 vintage delivered ripe fruit balanced by strong natural acidity due to elevation. Harvesting was done by hand, followed by whole cluster pressing and spontaneous fermentation in neutral barrels. The wine was aged on fine lees without stirring to maintain clarity. The resulting style is incisive and mineral, showing citrus, green apple, chalk and a long saline finish.
