Sylvain Pataille is one of the most intellectually rigorous and quietly influential vignerons working in Burgundy today. Based in Marsannay, he established his domaine in 1999 and has since become a leading voice in low intervention viticulture across the Côte de Nuits. Farming is certified organic and moving towards biodynamic principles, with a strong emphasis on soil health, massal selections and the preservation of Burgundy’s overlooked varieties. While his reds have earned cult status, it is arguably through Aligoté that Pataille most clearly articulates his philosophy, treating the grape with the same seriousness and precision afforded to Pinot Noir.
This Bourgogne Aligoté comes from old vines rooted in limestone rich soils around Marsannay. The 2023 vintage delivered ripe yet vibrant fruit, retaining the naturally high acidity that defines the variety. Fermentation takes place with indigenous yeasts, followed by ageing in older barrels to build texture without masking the grape’s clarity. The result is taut and mineral, with notes of citrus peel, green apple and a subtle saline edge. There is real depth here, far removed from the dilute stereotype of the past, offering precision, energy and a distinctly Burgundian sense of place.
